Sunflower Pancakes

Hello and top o' the morning to you! Had a good start to your week? I hope so! Either which way, pancakes always make you feel pretty spiffing, don't they? Have you tried adding different seeds to the batter and see what happens? They add a bit of crunch as well as flavour, which - let's be honest - isn't a bad thing!

Originally, sesame seeds were used in this recipe I found, but I only had sunflower seeds so I used them instead, and it worked a treat!

Sunflower Pancakes
(Makes 2)


For the pancake batter:
1 egg
5 heaped tbsp wholemeal or gluten-free flour
1/2 cup milk (125ml)
1 tsp oil such as sunflower or rapeseed
1 tbsp syrup (maple, agave etc) plus more to serve

Juice of 1/2 lime (or lemon)
2 bananas
2 tbsp sunflower or sesame seeds
1 tbsp oil (neutral, like sunflower oil)

- Start by mixing together the ingredients for the pancakes, and leave to set for about 5 minutes.

- In the meantime, squeeze out the citrus juice into a small bowl, slice the bananans - and dip them into the juice. Make sure it is all coated slightly, and set aside.

- Now, heat 1 tbsp oil in a pan and add 1 tbsp of the seeds in, lightly toast for about a minute, before pouring half of the pancake batter over it, using a ladle. Swish the frying pan around a few times so that the whole bottom is coated and the edges are even. Cook until you can see it is cooked through (when the batter is set in the middle), this should take 3-4 minutes. Flip over and fry until slightly golden. Repeat with the remaining half.

- When the pancakes are done, simply serve with the citrus banana, fold over and douse with 1 tbsp syrup each, and enjoy!


On another note, the other day when I was at some friends' for a clothes-swap (so much fun! Ever done it?), I got a jar of homemade chutney! (you know who you are!)


I have already demolished half of the jar-ful of the chutney, and it was delicious! Especially with a bit of cheese. But check out the beautiful colour!


Presents like these really make me warm and fuzzy inside!

    Ja, starten på uken har vært super. Vanlig hverdag, men med besøk av en venninne og sønnen nå i ettermiddag. Veldig koselig. God uke til deg Julie :)

    1. Tusen takk! Har du en vegansk favoritt pannekake oppskrift mon tro? :)

      Av og til kan det være god og bare ha helt vanlige dager, puste dypt in og bare ta livet helt med ro :) Er sikker på at ruskebollen din og kompisen koste seg masse :D Er så spennende med besøk vettu, og det var sikkert kjekt og se venninnen din igjen :) Her ble det jobbings, men hadde en produktiv morgen før det, er så godt :) God uke til deg også :) xx

  2. Jules!! A very belated Happy New Year!! I'm super thrilled to see the "crepe" kind of pancake on you blog. As you probably know, in the US, all you ever going to get is a super thick, hefty pancake. I much prefer your version of it. Yum! Adding sunflower seeds to it is such a great way to get some extra nutritional value!

    I've never been to a cloths swap but it sounds like a blast! Who does these things?! None of my friends! I can't imagine them ever wanting to, either so lucky you, Jules! Sounds like you have a cool, open minded group of people around you :)

      Thank you so much for your comment :D And also for approving of these pancakes! In Norway, we make mostly thin pancakes. When I was little, it was the best having them with jam, rolling them up and finding a fancy way of holding them between your fingers whilst attempting to munch 'em up! What type of pancakes would you get in Germany? :)
      These here had a lovely twist, using a bit of coconut and different kinds of flours than I am used to. You should give them a go and see what you think!

      Some of my student friends are all up for a clothes swap. We had been planning it for a long time, but hadn't gotten around to it until last weekend, it was so much fun. I would definitely recommend it :) There are usually a bunch of stuff you shove further and further back in your closet or drawers and forget about that some friends would also look gorgeous in no doubt! :)

  3. I actually had crepes this morning!! But no, I have never put any kinds of seeds in my pancakes..that I can remember...
    Also, a clothes swap? That sounds like so much fun! Hope you are having an amazing week! I think I will have to try these on National Pancake Day ;)

    1. Crepes are fantastic :D I hope you get around to trying this recipe :) It is fairly easy to make some swaps for store cupboard ingredients so you don't have to go out of your way to make em (last thing you want first thing in the morning / effort! :P)
