Humble Mushrooms on Toast & 20% off My Book

Happy Black Friday or Happy Friday as it just learnt that they call it over in Norway, you learn something new everyday, right?

So since you are all probably spending ALL your silvers on other things than food, I thought of giving you a cheap, healthy and fantastically tasty recipe for a humble dish that is easy to forget about sometimes - Mushrooms on toast! Have you got some leftover mushrooms to spare? Mix them up if you have several kinds or just use plain white mushrooms like I did here - frying them until nice and golden releases all the flavours that they hold.

This toast topper is special enough to buy mushrooms for exclusively, I can tell you that much!

Humble Mushrooms on Toast
(Serves 1)


2 generous handfuls of mushrooms, sliced
1 tsp oil
1 tbsp light butter
Salt and pepper
Parsley (freshly chopped or dry)
Other herbs and spices (not necessary, I used some Nigella seeds)
2 slices of toasted bread to serve

- Start by heating the oil in a medium frying pan. Turn it up high, add your mushrooms and seasoning. The pan should be so hot that it literally sizzles from the moment the mushrooms touch the pan.

- Add butter and turn down a little once they start browning and toast until they are the way you like them.

Serve with toasted bread and a little extra butter to serve, and enjoy with a hot cuppa for breakfast, or as a comforting evening snack.

    1. Hey! Haha, yup I do indeed! Self-published it earlier this year (Maaarch methinks?) I am so glad you like the little excerpt from the poem :) The ones in the collection are a mixture of lots of different themes and genres (I made sure not to be too cheesy!) x

  3. I was browsing through your blog a couple weeks ago and stumbled across you post announcing your book. I was going to congratulate you on it, but I didn't think you wanted a super old post commented on...which as I am writing this out sounds ridiculous..
    But this toast! Gah! It looks a amazing! Too bad there is never any mushrooms in my house. My boyfriend HATES them.

  4. Så. utrolig. godt! Det der husker jeg så godt fra jeg var litt yngre og pappa var flink til å plukke kantarell og steinsopp og annen sopp på høsten. Fersk sopp stekt godt og puttet på en skive <3 Det var bare det beste.

    2. Takker og bukker ydmykt ^ ^ Hadde ventet så lenge på og faktisk ha en trykt kopi, så da tenkte jeg at jeg bare kunne ta det i egne hender og gjøre det selv på nettet :)
      Åhhh var din far en ekte sopp-plukker-mann? Du får ta han med deg til neste høst når det er sesong igjen, så kan han jo lære deg åssen det gjøres :) Gikk selv på sopp plukking på egenhånd i år, men kom bare hjem med skumle ting som så ut som det som grodde i skogen i Bamsebladet, så jeg tok ikke sjansen...
      Men hadde noen venner som plukket sopp og som vi alle koste oss med for noen måneder siden, det er jo luksus! Så får du jo fatt i god vegansk margarin nå til dags også :) x

  5. Holy crap!! I had no idea you're a writer, too! You truly are multi talented. I'm sorry I missed the announcement of your book, too! You must be so proud, Jules :) What a wonderful achievement!

    Believe it or not, I never had mushrooms on toast. It sounds delicious, though, and I can't believe I have never thought of it before haha!! I just bought a bunch of wild mushrooms at Trader Joe's that are about to go bad (or be frozen) so this is on the menu for tomorrow :)
