Balsamic Pasta

Hello and happy Wednesday! We are halfway through the working week, and today I took my first ever customer calls in my new job, it was both petrifying and exciting at the same time, but it went fairly all right, and I like to think I was of a little help ^ ^

How are you doing? And will you be celebrating Easter or just the coming of Spring in general? A couple of my friends and myself included seems to have been doing some Spring cleaning recently, it just seems like it is some biological instinct that kicks in.

But after work today I was beat! So I rattled up an easy-peasy dinner and then I made myself some home made marzipan, cause marzipan is something they eat a lot of at this time of year in Norway, but it isn't AS easy to get a hold of here in Glasgow. The recipe for that will pop up here in the near future, so stay tuned! For now though, let's make a pasta dish!

Balsamic Pasta
(Serves 2)


1 cup uncooked wholewheat pasta
1 tbsp oil
1 medium onion, chopped
1 fat garlic clove, finely chopped
4 quorn chicken-style fillets, or 2 chicken breasts, diced
A dash liquid smoke (optional)
Salt and pepper
2 roasted peppers, chopped (optional)
A good splash of white balsamic vinegar or white wine vinegar
Half a bunch of parsley, chopped (about 1/2 cup)

- Start by cooking the pasta according to the instructions, in some lightly salted water.

- Now, in a frying pan, heat up the oil and brown the quorn/chicken along with the onion and garlic. If using meat, make sure before serving that it is cooked through.

- Once browned, add salt, pepper, and liquid smoke, as well as the roasted pepper (if using), balsamic- or white wine vinegar, and parsley, mix through.

- Once the pasta is cooked, drain and chuck it into the pan with the other ingredients. Heat through and serve!

  1. Congratulations on your new job!! I have a lot of catching up to do! Sorry I was MIA but I'm back now to read through all your lovely posts! This recipe is right down my alley - I love all the ingredients and it looks like perfect comfort food! I love that you add fresh parsley - yum! Also, you cannot beat home made marzipan. Can't wait to see your recipe!!

      No worries to apologise, sometimes life gets in the way, which is usually a good sign, but I am super chuffed to hear back from you again <3
      This was totally an impromtu dish, and I was glad it worked out nicely in the end, just goes to show sometimes improvising does work out :) xx

  2. I am not sure if I'll be doing anything for Easter. Maybe bake something :)
    This pasta sounds like such a delicious dinner idea! I'm excited for the marzipan recipe :)

    1. Hah, any excuse for baking right? :D That sounds lovely :)
      This pasta was surprisingly good! I always am surprised when I improvise and it goes right :P

  3. Så bra du har funnet et godt anternativ til kylling som du liker. Jeg ble vegetarianer da det ikke fantes så mye slikt ( i Norge iallefall), så jeg vente meg aldri til å spise "fake-kjøtt". Og nå tenker jeg aldri på det, og savner det aldri. Jeg synes det er like greit. Men synes det er flott at slikt finnes. Tenker at S kommer til å få med seg soyapølser og slikt i barnehagen- når han begynner der :)
    Uansett, dette høres nydelig ut!

    1. Uff, ja vi er heldige sånn i disse tider altså! Gjør det mye letter og gå over til og spise vegetariansk, og faktisk er Linda McCartney sine vegetar pølser bedre enn mange andre kjøtt pølser en får tak i faktisk! :)
