Skinny Potatoes & Eggs

Let's talk potatoes!

Chips straight from the oven, or roast potatoes - crisp on the outside and soft in the middle, surrounded by lots of goodies, it's what you want right? Well come on and follow me then, and whip up this easy peasy meal in no time! You can also add mushrooms to it if you like.

Add one egg for a good lunch, and two - dinner's served!

Skinny Potatoes & Eggs
(Serves 1)


200g salad potatoes, halved
1 tsp olive oil
1 small onion, finely chopped
A dash black onion seeds (optional)
1/2 tsp oregano
Salt and pepper to taste
2 eggs

- Simply start by pre-heating the oven to 200ÂșC.

- Now, half the salad potatoes, and boil ten minutes. Drain and set aside.

- In a bowl, mix the chopped onion, potatoes, salt, pepper, oregano, and onion seeds (if using, you can also use nigella seeds). Place in a medium baking dish, or in a foil "bowl" (like the one you see in my picture). Bake for 20 minutes.

- Then, simply make two gaps in between the vegetables, and crack the eggs in and place back in the oven, baking for a further 10 minutes.

Cool slightly before serving, and tuck in!

  1. Dang, that looks good, Jules!! I never thought about baking the egg with veggies - genius! As I always eat lunch at home, I'm always on the look out for easy, healthy recipes like this! This is so going to be on the menu today :)
    As for your question, I don't have a favorite egg dish, I pretty much love eggs in any form or shape. We just made no-mayo egg salad last night (recipe on my blog) which is still a favorite! Oh, and of course, deviled eggs are a classic.

    I hope you have a lovely morning at home before your late shift!! It's almost weekend so hang in there ;)

This was a treat, especially with the black onion seeds ^ ^ I'm with you when it comes to egg - any form will do, but they do taste especially nice when you add a little bit of something extra! The no-mayo egg salad sounds amazing! I'm going to check it out right now :D And I hope you like this humble little dish :)

      Haha as for my weekend, that tends to be the busiest days in work, but I have had a few days off already this week, so I'm properly charged up :D I hope you have a lovely day too :) x

  2. This sounds like a tasty breakfast, love that it is healthy too! I usually eat sweet breakfasts (obviously :D) but savory potatoes are good also. Black onion seeds sound interesting, I've never tried those, but I imagine they add a little extra something :)

    1. Thanks June :) This was delicious! I think black onion seeds is more or less the same as Nigella seeds, which might be more useful as it seems to usually go under that name :) I hope you have a lovely evening m'dear! x
