Lime Cupcakes

I saw this lovely, healthy recipe for lemon cupcakes, and decided to try and make them, adding a few bits here and there and using what I had at hand. They turned out really lovely, not too sweet, just the way I like it - and you can make some lime or lemon frosting or a cream cheese topping if you want, I kept them eu natural this time...

Lime Cupcakes
(Makes 6)


1 egg
Juice of 1/2 lime (or lemon)
1 tbsp maple syrup
1/2 cup milk of choice (I used almond)
2 tbsp vanilla protein powder
2 tbsp coconut flour
2 tbsp sukrin gold/xylitol/brown sugar
A pinch of both bicarbonate of soda and baking powder (optional)
A handful of currants (optional) or you can use chocolate chips!

Lime cream cheese frosting or lime icing to serve

- Pre-heat the oven to 160ºC.

- Mix all the ingredients together well and pop into cupcake tins, moulds or papercups. Bake in the middle of the oven for 20-25 minutes.

- Leave to cool before frosting, or simply serve, I hope you like them!

It is getting chilly out, but not nearly as cold as one would expect at this time of year on my side of the globe, but that i no excuse not to cozy up even still!


It's starting to go dark around 4 or 5 these days, and yesterday the moon was hanging beautifully in the sky when I saw it outside my window.

  1. Ah those look wonderful! I am fond of lime in desserts, but I haven't really tried it in a cake. Maybe someday! And love that skyline photo, so pretty with the moon and everything :)

  2. I've been to Bergen (search my site if you don't believe me!). But never Glasgow. I like Scotch. If that counts and I'm a Californian, so limes and beautiful moonscapes are my heritage. GREG

      I believe you, and I am so glad you've been! I don't know many people who have, but it is so wonderful with the fjords and mountains :)
      And not to worry about not having visited Glasgow, hehe a wee dram is pretty good in the evening though!
      I haven't been to California myself, but I have an auntie and uncle who lives there, and I have been to New Jersey - I know..it doesn't count, but at least it's the States! Still plenty of more time for travelling :D x

  3. It's cold here too!! But unlike you, all of my warm and cozy clothes have been suddenly falling apart (WHY NOW!!) I guess I need to go shopping!
    But my favorite fruit/vegetable cupcakes is carrot cake. But maybe because I haven't tried lime yet...

    1. Awww, yeh, it definitely sounds like it is time to top up on Winter wear at your end, any excuse right? It just makes the season miles better when you have something cozy to snuggle up in :D
      I loooove carrot cake (my mum makes the best! But then again, there is a slight chance I might be biased....), so I am sure you will like this too! A bit of cream cheese frosting, and munch away :D Hope you've had a great weekend Cathleen! x

  4. Oh! A grain free recipe?! I'm totally intrigued!! I'll have to give these a try! I love your little molds, I have girly pink ones but I like yours better :)
    You look so cozy! We're getting a cold spell this weekend... we may even get snow which is rare for this part of North Carolina (I honestly can't wait!)
    That's a beautiful shot of the moon. Mine never turn out - it always looks so impressive in the sky but the photos are meh. Good job, Jules :)

    1. Awh thanks m'dear! I never really get any good shots of the moon either, but despite the one above being a little blurry, I thought it was as good as it would get. I love when it has that deep dark yellow colour, sooo purrdy!

      Wait, you're expecting SNOW in North Carolina and it's not even the end of November yet? Sounds more like Norwegian or German weather forecasts! I like when the snow lies like a blanket covering the ground, not so much when you get slush and ice though! But then you can just snuggle up with some tea ^ ^

      I think you'd love these cupcakes! And you could just use any grain free ingredient instead of vanilla protein if you don't have it, like ground almonds :) I hope you are having a lovely week so far :) x

  5. Ja, er det ikkr rart at det plutselig er mørkt supertidelig!? Her også blir det mørkt i 4-5 tiden. Synes det både er trist og koselig :)
