After FOUR weeks of not being able to post, I am back!
Norway's constitution Day has come and gone (17th of May) and I celebrated it after seven years in Scotland now having marked the day. The flatwarming has been had and I am super stoked to be back and blogging again, withdrawal symptoms? You betcha! I shall enroll a few of the happenings that have come and gone, along with the back log of delicious recipes I have sitting waiting here patiently on my desktop.
Since it’s a new, fresh start, I figured I would post a breakfast recipe – perfect to kick off any morning!
Granola has become one of my favourite things to make! It tastes a lot better than store bought granola, and it is easy as chips to make!
I love that you can add whatever you feel like of seeds, nuts and dried fruit as well as spices for extra fragrance. Here though, I decided to keep it simple, and it was lovely! Would perhaps add some whole nuts to the mix next time, I can imagine some dark cocoa would be a lovely addition too, but I haven't tried yet!
Peanut Butter Granola
(Makes 2 small jars)
4 tbsp peanut butter
4 tbsp honey (use syrup for vegan version)
1/2 tsp cinnamon
1/2 tsp vanilla extract
2 cups of oats
- Start by pre-heating the oven to 180C.
- Now, in a pot, melt the peanut butter and honey over medium heat (this can also be done in a bowl in the microwaves for about 20-30 seconds.
- Fold in the oats, cinnamon and vanilla extract and make sure it is all covered. Take a baking tray and spread the mixture out, press down into a layer so that you will get some clusters. Bake for about 15-20 minutes until golden. Then, open the oven door slightly and let it cook for a further 5-10 minutes to let steam out.
- Take out, and leave to cool entirely before breaking it up carefully. Store in an airtight container. Serve with milk, or over yogurt with a drizzle of syrup or honey!

Aaaand the second one! Quite the difference, ey? The photos were taken on different times of day, hence the light difference, it's so nice and cosy now though!
And here is the first "proper" meal that I had in the flat as I was unpacking. In all fairness though, with a bit of turkey, this salad by Sainsbury's was pretty tasty - I love the addition of the crunchy crumbles, and sultanas!

DeleteThe granola was lovely thanks. I substituted nutmeg for the cinnamon as I had none. We enjoyed it with chopped green apple, sliced banana and sweetened vanilla greek yoghurt. My teen son loved it :)

Og dette ser nydelig ut. Jeg får halsbrann av peanøtter, men man kan jo nesten alltid bytte ut peanøtter med andre nøtter- heldigvis :)
