Roasted Nutmeg Cauliflower

I realised I haven't posted a side/snack in a long while, and since I gave you the chai banana bread yesterday - I might as well try and get some vegetables in you as well, right? S'all about a balanced diet! And now you can't say I didn't try.

Cauliflower is one of those vegetables I haven't cooked much with, why? I don't know! It's got such a lovely mellow flavour and is quite versatile. With just a few spices, you can make this a lovely side dish with a bit of a kick to it, or serve it as a snack with some chutney or creamy dips.

Roasted Nutmeg Cauliflower
(Serves 2 as a generous side-dish)


1 small cauliflower, broken up into florets, stem sliced
2 tbsp sunflower oil
1/3 tsp salt
1/3 tsp black pepper
1/4 tsp nutmeg
1/4 tsp chilli powder

- Pre-heat oven to 180-200°C.

- In a big bowl, combine the oil and spices. Mix well before adding the cauliflower. Cover with a lid or a plate and give it a right good shake - dancing optional.

- Spread the cauliflower in a baking tray, and bake for about 25-30 minutes until nice and golden.

- Serve as a side dish with a main meal, or as a snack with some lovely creamy dips and/or fruit chutney!

    1. Muchos gracias mi amiga! The nutmeg adds a really nice flavour without being too in-your-face, t'was delicious with the chutney, and would be great with sweet chilli sauce too! x

  2. Ovnsstekt blomkål er SÅ godt. Takk for påminnelsen, det er nemlig alt for lenge siden jeg har laget. Det går jo mest i rå mat her, men noe varm på en av disse regnværsdagene, hadde jammen ikke vært dumt!

  3. Jules, this looks amazing. I love nutmeg AND cauliflower so I think I'll make this tonight!! Much like yourself, I don't use cauliflower that often even though I really like it.

    My favorite recipe is a cauliflower pizza crust. You'd never guess it's cauliflower!
    Also, I'd like to try and make cauliflower steak (lol) I had it at a vegan restaurant once and it was delish!

    This is next, though. I hope it'll work with frozen florets :) Thanks for this awesome recipe!!

    1. Ahh, the cauliflower steak sounds..interesting, but I have seen many a cauliflower pizza crust and they look delicious!

      Thank you so much for your kind words Rose, once again, leaves me with a smile on my face :D If you thaw the florets in the oven for a bit before adding the coating, I am sure it'll work - I'll cross my fingers for you :) x
