Vegan Smokey Burgers

Today, I was meant to have a vegetarian Friday alas I#m already about ten king prawns over that quote *sigh* BUT I decided to stay true to making a vegetarian dinner, vegan even!
I have tried to make vegetarian burgers before, but these ones turned out the best out of them all so far!

Vegan Smokey Burgers
(Makes 5-6 patties, about 220-185 each)

The pita breads were just a liiiittle bit too small for the burgers, so I cut them in half, and voila! Very tasty along with some salsa and a squeeze of lime juice

60g soy granules
1 tsp barbecue powder of choice
1/2 tsp salt
1 tsp smoked paprika
1 tsp thyme
1 tbsp black pepper
1/2 tsp liquid smoke (To be found in Latin American shops...or Norway, hehe)
1 tbsp soy sauce
2 tbsp tomato purée
1 red onion, finely chopped
180g can chickpeas, drained, or soaked overnight
50g peanuts or hazelnuts (I used chopped hazelnuts)
25g potato flour
1-2 tbsp psyllium husk (optional)
1 tbsp oil for frying (I used a light spray)

- Start by chucking the soy granules, spices and soy sauce in a blender. Boil up about 200ml water and pour over it, sover and let it sit for about ten minutes, so the granules get a chance to soften.

- Chop the onions and soften in a frying pan for about five minutes. Then add to the soy mixture, along with all the rest of the ingredients except the oil.

- Heat a frying pan on medium low heat, and shape the mixture into 5-6 patties. Fry each in a little oil for a few minutes on each side until golden and slightly crisp.

And done! Serve with salsa, guacamole, pita breads, flatbread of whatever you want and enjoy!

    1. Hi, and thanks for stopping by!
I think I will try a bit harder and have a vegetarian day once a week. I know it's not as good as being a full time vegetarian, but my body simply doesn't seem to agree with that diet. Vegetarian food is delicious though! Falafels were my go-to comfort food for a couple of years, but then I guess I started cooking more varied I suppose. Liquid smoke is genius! I hope you find some good ideas on my blog. I had a look at yours and there are some pretty delicious looking recipes there!
