Velvety Avocado Cheese Pasta

Hello and good evening!

When I first found this recipe, I thought "It seems a little strange, avocado and cheese".... But then I realised, that with some seasoning, that's a flippin' fantastic combination! I lightened it up a little, using ricotta cheese instead of mascarpone, and it turned out great!

Easy on the tabasco or the hot sauce you're using, so as to not throw the cheese sauce off balance. I topped it with some fresh basil, and it went so so well with the whole dish - so I hiiiighly recommend that!

Velvety Avocado Cheese Pasta
(Serves 2)


160-200g wholemeal or gluten-free pasta (depends how hungry you are)
1 large ripe avocado
100g ricotta
4 drops tabasco or 1 tsp hot sauce (start with half the amount and add more to taste)
Finely chopped coriander and/or basil, about a small handful or so
Salt and pepper to taste

Fresh basil leaves for garnish, or chop them and swirl them into the pasta - yum!

- Start by cooking the pasta as instructed.

- In the meantime, make the sauce: scrape out the avocado, and mash with a fork, then stir in the ricotta, tabasco/hot sauce, chopped herbs, and season with salt and pepper to taste. Keep the stone in the bowl if you are not serving it straight away.

- Turn off the heat of the pasta, drain, and stir in the soft, velvety cheese sauce. Serve and top with fresh basil leaves. Grab a fork and go!

I was lucky enough to get to go to my friend Epikat aka Katie and we made almost a bucket-load of crêpe batter, we also had a wee crêpe-dance that we made up last year. Y'know, cause it makes time pass quicker when you are waiting for your crêpes or pancakes to cook ^ ^
I was also lucky enough to get my flatmate home yesterday after she had been on holiday to Latvia, and to celebrate this Imma gawna make her some waffles tonight, since she missed out on my Saturday and Sunday breakfast waffles (she gave me a nudge nudge on facebook when she heard I had made them without her, hah!).

      Hopefully you did Pancake Day justice too ^ ^ I had a couple with savoury toppings and then of course - epic proportions of sweetness :D
      You should give this dish a try should you happen to feel like something savoury that isn't baked or crêped :D With the added basil is tastes fantastic! x

    1. Hey! You mean the "tagging"? I think it's one of the general optional for what you can add to your sidebars :) It makes it a lot easier to categorise. I am sure you'll figure it out in a flash, if not - I'll double check for you :)

  3. Ooh dette virket spennende og litt rart! :D Vi har lyst til å spise mer avokado, siden det er så sunt, så kanskje vi tester ut dette.

      Dette var mindre rart enn det høres ut som, lover :D Det er nesten som en veldig tykk, kremet hvit saus :) Du kan også varme den opp litt ekstra i pannen etter du har rørt den ut i pastaen, bare pass på at den ikke blir misfarget :)
      Jeg skal iallefall definitivt lage dette igjen ^ ^ Snakket med en i en helsekost butikk, og han sa det var utrolig viktig for huden at vi ikke bare brukte sunn og fet hudkrem, men at vi også spiste nok sunt fett, så dette er absolutt en god idê for ytre velvære såvel som indre :) x

  4. I have always wanted to try adding avocado in my pasta, but my boyfriend HATES avocado. Maybe I will do a green theme for St Patricks day so he won't be too freaked out by it.
    I didn't celebrate pancake day this year, but I'm glad you had a great day that day!!

    1. This is a really great way of sneaking in a bit of 'cado to the pasta if your boyfriend isn't that big a fan. You can't really taste it for the ricotta and hot sauce (and fresh basil if you've got some at hand!) :) Let me know what you think of it if you get to try it out :)

  8. You're killing me, Jules - this looks drool worthy and I am definitely off grain for the time being. Yikes!!! I just want to stick my face in this bowl!! I love making creamy stuff with avocado, it just lends itself to it (both savory and sweet dishes).
    I missed Pancake Tuesday (to no one's surprise) but I'm much more interested in your waffles anyhow. Lucky room mate of yours!! ;)

    1. Hahah, I just had this cartoon image in my head of you going face first into this :P Perhaps you could make this and add boiled/crushed potatoes to it instead, or something else grain-free? :)
