Cocopea Marbles

Finally the weekened is upon us! *Raises coffee cup* cheers!
so what better than rattling up some healthy, but delicious sweets?

I found this lovely recipe for peanut fudge, and then I accidentally left out two of the main ingredients and this happened... I'm not complaining though, they're delicious - A typical sweet'n'salty kind of treat!

Cocopea Marbles
(Makes 6-7)


50g PB2 or peanut flour
20g xylitol/sukrin gold
A pinch of salt (optional)
1 tsp agave/maple syrup
2 tbsp water (A little goes a long way, so be careful!)
Dessicated coconut for rolling

- In a bowl, mix together the peanut flour and sweetner along with a pinch of salt. Mix well to combine before adding the syp and 2 tbsp water. Use a spoon to knead well until you have almost like a gingerbread-dough textured mix.

- Now, roll it into a sausage and divide it into 6-7 pieces, roll them so you end up with pretty little peanut marbles, and roll in dessicated coconut. Chill until serving.

NOTE: You can also melt chocolate to coat them instead of using coconut, or both!

  1. Want! Kanskje jeg må en tur på butikken en dag. Hvis jeg i det hele tatt finner ingrediensene da. De har jo ingenting her. Skulle ha vanlig potetmel her en dag. De så bare dumt på meg og skjønte ikke hva jeg pratet om en gang. Men det går i hvert fall fremover da. De har kardemomme her nå! Det hadde de ikke når jeg var her for to år siden :P

    1. Peanøttmel kan være vanskelig og finne, meeeen du kan søke opp "marbles" her, så finner du flere varianter med andre ingredienser :) Potetmel måtte jeg på helsekosten etter her borte, skal du lage tørre vafler? :D
      Haha kardemomme burde de da ha i de fleste land! Sjekk i innvandrebutikkene, der har de det meste :) Lykke til med fremtidi kokkelering :D x

    1. Hehe ja, disse ble gode! Var veldig myke i begynnelsen, men et par timer i kjøleskapet gjorde de litt fastere, var gode uansett :D Hadde nok blitt fudge hadde jeg fryst de litt skal du se, var nok bare utålmodig ;) :P x

    1. Thanks A. Reyes! iHerb.com has a big selection of health products, and that's where I got my PB2 (light peanut flour) from :) They're based in the States, but I have also heard of some health shops in the States having it on the shelf too :) I hope you have a wonderful weekend Sir! x

  6. I have never seen peanut flour, either!! They make all kinds of weird flours in the US but this I have no seen! You can probably make it yourself, too!! Wow!
    How'd you forget the main ingredient haha!! That's hilarious, Jules. What a cute name -- Cocopea Marbles. Love it! Great recipe! I'll make these when my husband comes back; he loves all things peanut!

    1. Hahah, I like calling these things marbles instead of..balls, somehow it seems more fitting, and it definitely sounds tastier! Could also use the filling here for cakepops I bet! I know iHerb.com does the lighter peanut flower called PB2, they also do a version with cocoa ^ ^
      I know, I don't understand how I missed out the main ingredient, I thiiink it was because I thought you were meant to use that for the coating *facepalm*
      I don't blame your hubby for the peanut obsession, I am totally the same although I used to not like it when I was younger, have made up for it since though! I hope him and you both approve of these :) x
