Being Vegan in 1, 2, 3!

I thought that with Meat-free Monday becoming more and more popular, I would make a three day plan of healthy, vegan meals!

I myself am an omnivore and can eat most things, but sometimes... I just feel that vegetarian and particular vegan dishes don't get the acknowledgement and appreciation they deserve. So I guess that is why I decided to make this.

Each of the three days have five meals, and so there are a lot of varied, lovely meals and treats for anyone. I am sure even the carnivores could be convinced that eating dishes without meat can actually be quite delicious! You can also of course swap any of the breakfasts, lunches, dinners and other meals with one from the other days, it's all down to what you feel like having really!

Day 1

Breakfast:
My Date with Mr Oat Porridge
Tensies:
Vegan Yogurt, Nuts and Banana
Lunch:
Funky Spring Bulghur Salad
Dinner:
Edamame Sloppy Joe's
Evening Snack:
Healthier Chocolate Pudding

Day 2

Breakfast:
Chia Pudding with Piña Colada Granola
Tensies:
Apricot Shake
Lunch:
Tomato Barley Risotto (no Blue cheese)
Dinner:
Sweet Potato & Peanut Stew
Evening Snack:
Zingy Avocado Hummous (with salsa and nacho chips)

Day 3

Breakfast:
Porridge 8) Poached Plum Punch
Tensies:
Pea & Artichoke Spread (with rice crackers)
Lunch:
Mushroom & Barley Soup
Dinner:
Vegan Smokey Burgers

Evening Snack:
Soy Yogurt and Small fruit Salad


And that's about it! I hope you find some inspiration here, whether it be just to try something different for dinner, or some other meal of the day. If there's one thing that's for sure though - it's that vegan food can be delicious!

  1. This is a great idea! I'm personally not vegan, but I do like to "cleanse" sometimes, whether it's through going vegan for a week or doing a juice cleanse, and this is a great guide for a few days of being vegan.

    1. Hi Rachel! Thanks :) I am an omnivore and can eat almost anything, but it is both cheap and healthy to have some meatfree days from time to time, like you said, "cleansing" and topping up on your fiber and whatnot can make a bit of a difference, plus you'll do the animals a favour! Even just having one vegetarian or vegan day a week can make a huge difference! That's great how you sometimes do that as well, got a favourite recipe? x J

    1. Aww Cathleen, I do know you like your baking and adding scrumptious things that sometimes include dairy, but there should be some vegan substitutes! Or even just have a vegetarian day, if not fully vegan. I have seen a lof of people just doing the "Meat-free Monday" :) Would love to see if you came across some other lovely veggie dishes to rattle up as well! x

  3. Åhh, her var det helt utrolig mye godt! Så fristende meny!
    Jeg synes det er så flott når de som spiser kjøtt velger mye vegansk likevel. Det å kutte ned på animalsk er jo så positivt for miljøet også. og jeg tenker at folk flest heller "kutter ned" enn å "kutter ut".

    1. Tusen takk for fin kommentar! De sier at selv litt hjelper, og om vi alle iallefall reduserte bruken av kjøtt og dyreprodukter, så hadde vi hatt mye større plass til planting av andre ressurser som vokser fortere og kan metter flere mager!
      Syns vegansk mat er utrolig godt, og ser på det som en gøy utfordring og lage vegansk mat. Som regel så er det litt mer jobbing med det, men så er butikkene blitt mye flinkere til og ta inn andre varer som kan byttes ut med det, slik som soya og nøtteprodukter! Syns det er dumt at det er mange som fnyser bare de hører ordet "vegetarisk", er jo ikke bare "kanin fôr" som de kaller det, det er du iallefall et fantastisk bevis på med alle de fiffige rettene dine :D x
